It just does that. The original species Echinodorus augustifolia has straight leaves and the Vesuvius variety is a mutation that sometimes reverts. If you see it in time you can pinch of the straight growing runners and hope the next one may be curly and maintain your Vesuvius that way. ...I have a whole tank of straight leaves!
